The Fish pepper is a historic (pre-1870s) African-American heirloom. Known for its striking variegated white-and-green foliage and striped pods. Primarily used in Chesapeake Bay seafood dishes, it offers a medium-hot, bright, slightly fruity flavor (5,000–30,000 SHU) with a "peppery snap," perfect for fish, crab, and white sauces. Often compared to a serrano or jalapeño.
